Sorry blog world, I've been cheating you with my Halloween costume :) back on track soon I promise! As a little something to tide you over here is a delightful thai peanut dish I made last night for a friend and I!
I started by cooking rice noodles (they cook in less than 5 minutes and are so tasty). I also added baby carrot slices right to the water with the noodles because, why dirty another pan??? In my wok I scrambled 2 eggs and pushed them to the side after they were cooked.
The easiest peanut sauce in the world:
a heaping spoonful of crunchy peanut butter (or whatever you have)
a good pour of low sodium soy sauce (or whatever you have)
a splash of Orange juice
a clove of garlic
half an inch of grated ginger
I added this mixture to the wok along with S&P and stirred around with the egg. I also added a little dark sesame oil, in hind sight I would have added more because the noodles turned out stickier than I would have liked.
Add the cooked noodles and carrots to the wok and stir it all together. Top with scallions and your done! Yummy Thai noodles in minutes!
