I'm pretty much obsessed with this Parmesan risotto. It's so cheesy and oh so easy and surprisingly not that bad for you. If we split the box it's under 300 cals each. Just.Can't.Get.Enough.
I am also obsessed with roasting vegetables. Heat oven to 375 and put any kind of veg on a cookie sheet, drizzle in olive oil and S&P and you will just swoon over the tastiness. I like to under cook mine a little to maintain color and some crunch.
