Welcome to Mainely Veggies! I had every intention of creating an amazing dinner tonight for my first post, but after a long day and late evening workout we returned home around 8:00! Too late for me to start anything too complicated so on the drive home we decided to make "Breakfast for dinner." I decided on a quick frittata (basically a quiche without a crust), fruit salad, and grilled whole wheat english muffins!
I started by mixing 7 eggs, a half cup of 1% milk, a big handful of arugula, 2 cups frozen (thawed) broccoli and sea salt and pepper all together. Then I added the mixture to an iron skillet preheated on high and topped with 1/4 cup of shredded part skim cheese. Meanwhile, I also preheated my oven to 375 degrees. After the edges browned in the skillet I transferred it into the oven for about 10 minutes, or until golden on top.
I then Cut up 1 banana, 1 apple, and a handful of blueberries and tossed it all together with a splash of OJ and dash of cinnamon (which I add to as many things as possible, just because I love it.)
Toasted up some wheat english muffins and pulled the frittata from the oven and dinner/breakfast is ready! (topped with my favorite hot sauce of course.)
There you have it, an easy, quick, healthy weeknight meal, and it was oh so delish!
