The man-friend has a serious case of the "man-cold," so what better cure than some homemade minestrone! My first actually.
1 carton vegetable broth
1 large can diced tomatoes
2 cloves garlic
2 large leaves fresh sage
A bunch of random veggies (kale, carrots, onions, snow peas, peas, and a can of kidney beans)
Shells (I would have preferred wheat shells but Whole Foods only had white ones, shocking right???)
Saute the onions, garlic, carrots until softened. Add the diced sage and broth. Mix in all the veggies, beans and diced tomatoes. Salt and pepper to taste. Let simmer until ready.
Some grilled rye left over from Thanksgiving on the side. (Check out the grill marks!)
