I sauteed garlic and shallots in extra virgin olive oil and a little white wine (I always have a bottle of inexpensive white wine in my fridge just for cooking). I then added fresh spinach, snow peas, and sliced carrots which I boiled right in with the ravioli.
To add a little extra protein I toasted some walnuts in a dry skillet to top the ravioli
Add a little parmesan cheese and voila!
Sweet treat: this amazzzzzzing maple cotton candy I saw at Whole Foods a couple weeks ago and have been dreaming about since. I had to get it, and yes, it's already gone :)
