Southwest-ish Salad

I just love huge salads with lots going on.  This little (well, big) gem is packed with so many flavors!


I made a quick corn salsa and put it over a bed of spinach with a boiled potato, an over-easy egg, avocado, shredded cheese, light sour cream and scallions.



 
...and the obvious: Siracha.  Have a good night!

  3. There's a concoction I wanna try with apples and chicken but please for my sake, include as much veggies as possible :)
