Peas On Earth

Get it? Like Peace on Earth? Tis the season right? My own jokes just kill me. The three day pea soup ordeal has come to an end. This pea soup is vegan and was very flavorful!  I planned on picking up some liquid smoke to add a smokey element that ham would normally provide in split pea soup, but I never did.

1 1/4 cup dried peas
1/2 a white onion
A handful of diced baby carrots
1 box of veggie stock
A couple dashes of Thyme
Some Smoked Paprika (I kept adding more because I loved the flavor)
Salt & pepper to taste
6 cups or so of water

(I soaked the peas in a strainer inside a bowl so I could just lift the strainer out rather than fishing for all those peas in the water.) I added all the ingredients to a large pan yesterday.  Brought to a boil and simmered for a couple hours.  Today, I added the soup to a crockpot and cooked on high for 2 hours or so.  Next time I will use higher heat from the beginning and boil the peas down more so then don't take 3 days to cook ;) I probably should have followed a recipe for my first attempt.

The soup didn't get as smooth as I would have liked but the flavor was really good! 5 days till Christmas! Can you believe it?? I still have a few things to pick up but I think I'm in pretty good shape.  I opened a gift early (with permission) and it was a cool new apron with cupcakes on it! I'm thinking I should start an apron collection! We're going out for frozen yogurt! Pics soon if I can make it home without eating it all :)
