Sundays are for Soup

Soup! Don't you just love it? I do! I was in the mood for tomato, so I decided to make Creamy tomato vegetable soup with rice. Easy breezy.


I used:
1/2 a box of Pacific Creamy tomato
1 large can of whole peeled tomatoes
half a yellow sweet potato (diced)
1/4 of an onion
peas
corn
(I would have used carrots too but we were out)
sea salt n pepper
1 cup cooked brown rice (1/2 cup uncooked)

I sauteed the onion and yellow sweet potato in a sauce pan with a little olive oil to soften.  Then I added: everything else! So. Easy.


 Feta and sriracha on top.
