I hope everyone out there is freezing their old bananas for later use! I sometimes forget about them in the freezer until there are a bunch and they start flying out when I open the freezer door. This happened this morning so......time for banana bread! I've actually never made banana bread from scratch because ya know, you've got to measure things which I DO NOT DO. But with this fancy bright green mixer taking up a lot of counter space it just screams "Use me!!" So chocolate chip banana bread it is! I roughly followed a recipe online that I had all the ingredients for. I did change a few things and hopefully it still turns out ok!
Chocolate Chip Banana Bread
I used whole wheat flour in place of bleached, raw sugar instead of white, and added a tablespoon of light sour cream because I was afraid the wheat flour might made it more dry. Since I'm new to baking, this may now be true at all.
Can't wait to slice into this and enjoy a slice with a cup of gingerbread tea :)
(Frozen banana tip: wrap in a paper towel and microwave for 1 minute, the banana will slip right out the peel and into whatever you want... smoothies, oatmeal, bread, or whatever!)
