Twas a Very Cold Night

I finally made it home with the heat blasting and bundled up tight and thought instantly I would make soup for dinner.  Very very HOT soup.  Spicy asian noodle.

Into a pot went:

  • a little sesame oil (I use the in all my asian dishes) 
  • 1 carton of veggie stock 
  • 2 inches or so of fresh grated ginger  
  • 2 cloves of garlic
  • 3 sprigs chopped scallions
  • 1/2 a block of cubed light tofu
  • 3 squeezes of sriracha
  • a tablespoon of apple cider vinegar
  • rice noodles
  • 2 eggs (scrambled) 
  • some frozen broccoli 



What is it about drinking out of a straw that seems more fun than out of a regular glass? There's a lemon at the bottom too :)
