For lunch I heated up the Curry Coconut soup I made the other day in a sauce pan. Add 2 heaping handfuls of spinach and coverd. The spinach wilted wonderfully and bulked up my lunch a bit.
On top some plain Greek yogurt, sliced almonds and a little coconut.

those almonds are better if you toast them on a sheet pan and store them in a plastic bag or container. much tastier. mom
