Pass the Shroom

I love mushrooms.  However, my man-friend does not. So I never buy them. Until this week when I shopped alone and I thought I might be able to sneak a portobello onto the grill like a real burger.  It did not work. He still didn't like it.  The end result? I got two shrooms :)

Spinach and arugula salad with cukes, scallions, avocado and some toasted walnuts. It was dressed in balsamic and olive oil per usual.  Grilled whole what naan on the side. We melted a piece of provolone cheese on the shroom. This salad was filling and flavorful even though the mushroom was not a huge hit.

Even though we had salads a lot I like to keep them interesting by adding new flavors, like nuts or cheeses or anything that keeps them from being BORING! Have a great night!

Protein Packed

Hurray for gorceries! A big salad for lunch with arugula, tuna (from the WF salad bar because I was feeling lazy), cukes, avocado and feta, topped with olive oil and red wine vinegar. So fresh and filling!

This salad is filled with good stuff! Protein from tuna and feta, good fats from olive oil and avocado. Yumm!

4 mini biscoff cookies with peanut butter for dessert! So good. Almost tastes like Nutter Butters?? Remember those??

Rosario's Part Deux

We didn't make it to the grocery store tonight which means I was scrounging for fresh dinner ingredients. I didn't have to get too creative though because we had a whole wheat pizza shell in the freezer, along with some Rosarios Pesto.  The Rosario's crust is just plain awesome! It gets so crispy in 8 quick minutes and dinner is ready! Pizza doesn't have to be a fatty mess, choose veggies over meat and wheat crust over white, (with not too much cheese) guilt-free awesomeness :)

Tonight I topped the whole wheat crust with pesto, spinach, part skim mozz and shallots. Shallots were a great choice, such great flavor. Side salad of course with a basil infused grape seed oil and balsamic dressing.

Take a Hike

Hey there! We spent the day hiking in Grafton's Notch. We had a great time, but man was it blustery at the top! That warm weather from last week is long gone. It was about a three hour hike up and down, a great workout!

So windy! Hangin' on!

Home to some pretty bare cupboards! I made a salad with the only fresh ingredients left in the house. Spinach,  1/4 avocado, a fried egg, some cheese and salsa.  It was good but I like I've had this salad way too often! Grocery store ASAP!

Where the Veggies At?

I've been a bad blogger this week! Sorry folks! Here's a little of what I've been up to:

 I had an egg-less "egg sandwich" (because I started to make it before realizing we had no eggs)  Whole wheat english muffin, spinach, veggie sausage and some cheddar jack cheese.

This actually was delightful even without the egg :)

We had a BBQ in March, in MARCHHHH!!?? For brother-friends birthday, in our backyard complete with tiki lights. A great way to kick off summer  spring!

Lots of food was enjoyed including this curried pasta salad I made.

Happy birthday!!! (Yes that is written on the patio with side-walk chalk.

Being the bad blogger I've been this week I naturally ordered takeout the next day.  These tofu drunken noodled were enjoyed last night for dinner as well as for lunch today :) (This was a from a thai restaurant that we had never ordered from before and it was really good. I honestly don't know where it came form but I will update it when I find out from my man-friend.)

Couch (Sweet) Potatoes

Curried rice on the menu last night! Mostly veggies I guess since it's hard to tell there is any rice in that bowl. Brown basmati rice(cooked) simmered with a can of light coconut milk, curry powder, garam masala, a tiny bit of cayenne pepper, garlic, broccoli, carrots, peas and cubed sweets that I nuked for a couple minutes.

Topped with non-fat plain Green yogurt, scallions and almonds,

Whole wheat grilled naan on the side. YUM!

We ate our bowls of curry on the couch while we watched The Girl with the Dragon Tattoo. It was good but very disturbing!

Some nights you just don't feel like cooking... that's why I put quick meals in my freezer for lazy nights. I froze a quart of veggie chili the last time I made it. Keeping your freezer stocked is a great way to have quick homemade meals at the ready even when you are in a time crunch. 

Heat on the stove and top with the chili must haves, sour cream, jack cheese, and scallions.

Pretty obsessed with these ginormous bowls :)

If you haven't tried this veg chili yet you really must! It is packed with protein from beans and quinoa and you will not miss the meat I promise!

I obviously added Sriracha to the top as well... I think I might be off to bed! G'night!

A Very Rare Meat Post

Every year we make a traditional boiled dinner for St Patrick's Day! I'm not even a little Irish but the man-friend has a wee bit in him so we embrace it :) This year I was cooking the day after St Patrick's day so I headed to WF hoping to find a day after sale on corned beef. No such luck. Holy moly meat is pricey! 

I plopped (literally) the beef (which came pre-seasoned) in the crock pot with some garlic, onions, carrots and a beer. Added some water to make sure it was all submerged. Then let simmer on low for a few hours. It smelled good. But I did not taste it. I taste food I'm cooking throughout the entire process and the weirdest part about cooking meat is not knowing if it is flavorful??

I was more interested in using this serving dish I haven't used yet :)

Not much any protein in my veg plate... but it was pretty tasty. This weekend was so gorgeous! I spent the day out side with my gal pal Maggie! Time to relax and watch the polar bears on Frozen Planet. Have a great night!

Scallion Farmer

I do not like raw onions but I love SCALLIONS! I buy them every week until I came across the best trick on Pinterest.  When you have used your scallions all the way to the ends put the white part in a jar with an inch or so of water.  They grow right in the jar. This was after just a few days sitting in the window! Cool huh!? Maybe this will be the one edible plant I can keep alive. Fingers crossed!

The Ides of March

Good morning! It's a lovely sunny morning in the nook where I blog :)

This is 1/3 cup oats blumped up like crazy with water, soy milk and berries.  Best of all it's purple!

Cool mug with a tea mixture. 2 bags 1 black and 1 gingerbread, mmmmmm.
