Curried rice on the menu last night! Mostly veggies I guess since it's hard to tell there is any rice in that bowl. Brown basmati rice(cooked) simmered with a can of light coconut milk, curry powder, garam masala, a tiny bit of cayenne pepper, garlic, broccoli, carrots, peas and cubed sweets that I nuked for a couple minutes.
Topped with non-fat plain Green yogurt, scallions and almonds,
Whole wheat grilled naan on the side. YUM!
