Home Cookin'

Tonight I made comfort food! I've said before that I almost never use my oven, only the stovetop.  Man do I need to turn that thing on more! I made lentil shepherd's pie which was amazzzzzing.

Love broiling to get that brown crust on top
I simmered the lentils (2 cups) for about 40 minutes with a chopped onion, carrots, garlic, thyme, rosemary and s&p.  At the same time made mashed potatoes (for the first time in my life, weird eh?) I used yukon golden taters and a giant sweet potato and whipped them in my mixer with some milk, s&p, and a little butter (nothing revolutionary ;)

Big for us little to drop off to brother of man-friend (brother-friend maybe?)
When the lentils were ready I mashed them a little in the mixer too.

Looks like the real deal right???
Next step layer, 1st lentils, next corn, topped with the sweet potato mixture.

Snuggled up on the couch to enjoy! Man is this stuff good! We rented two movies Hangover 2 and Twilight Breaking Dawn ... guess which one I want to watch first??!!

  4. The man friend's father, another carnivore, loved this veggie Shepard's Pie. In fact, the whole multiple generation family loved it.

    Thanks for the recipe.
