Tonight I made comfort food! I've said before that I almost never use my oven, only the stovetop. Man do I need to turn that thing on more! I made lentil shepherd's pie which was amazzzzzing.

I simmered the lentils (2 cups) for about 40 minutes with a chopped onion, carrots, garlic, thyme, rosemary and s&p. At the same time made mashed potatoes (for the first time in my life, weird eh?) I used yukon golden taters and a giant sweet potato and whipped them in my mixer with some milk, s&p, and a little butter (nothing revolutionary ;)

Next step layer, 1st lentils, next corn, topped with the sweet potato mixture.
Snuggled up on the couch to enjoy! Man is this stuff good! We rented two movies Hangover 2 and Twilight Breaking Dawn ... guess which one I want to watch first??!!
