Some nights you just don't feel like cooking... that's why I put quick meals in my freezer for lazy nights. I froze a quart of veggie chili the last time I made it. Keeping your freezer stocked is a great way to have quick homemade meals at the ready even when you are in a time crunch. 

Heat on the stove and top with the chili must haves, sour cream, jack cheese, and scallions.

Pretty obsessed with these ginormous bowls :)

If you haven't tried this veg chili yet you really must! It is packed with protein from beans and quinoa and you will not miss the meat I promise!

I obviously added Sriracha to the top as well... I think I might be off to bed! G'night!
