Corn Baby

I love corn. Corn in general really but I really really love baby corn. I can't think of anything else to use it in except for fried rice though (anyone got any ideas?). With the can of baby corn (the only canned veg I buy besides beans) staring at my all lonely in the cupboard I decided, 'fried rice it is!'

You can read more about how to make my fried rice in this post. I always make it a little different depending on what ingredients I have and tonight I added lima beans. Great addition!

On the side some pan fried tofu with scallions and sesame seeds.

Its hard to get tofu to get crispy. Tips: throughly pat dry with paper towels, bite the bullet and use a little oil instead of spray, and high heat.

Every time I make this one of us declares it's the best fried rice yet. I think tonight was my favorite so far!
