Thai Tofu Salad


Quick salad for dinner tonight. Tempted to have corn on the cob for the millionth time this week I consulted my one and only cookbook (Cooking Light, Fresh Food Fast) for some inspiration. I came across a salad very similar to this and decided on that! I’ve made this before but sometimes you just need a little reminder from a trusty cookbook.
Baby spinach, cucumber, peas, carrots, and walnuts topped with fried tofu with scallions and sesame seeds.
To get your tofu to brown like mine make sure to pat the tofu and press out as much water as you can (without squishing it). I used a little vegetable oil to help with the crisping and sesame oil for flavor.  After the tofu was browned on both sides i tossed in the scallions and sesame seeds. Topped with Whole Foods Ginger salad dressing. I added srirachi to mine (duh!)

Shrimp on the Barbie


Veggie heads like myself love the grill just as much as all the meat eaters out there. There aren’t many things I like more than grilled veggies…except grilled shrimp maybe!
Skewers of summer squash, zucchini, tomatoes, eggplant and vidalia onions. Brushed with an olive oil, garlic and s&p mixture.
The shrimp was seasoned with the olive oil mixture too. Man-friend added some cajun seasoning to his skewer.

We also grilled a wheat baguette to enjoy with dinner too! Next week is the first week of our summer farm share from Crystal Spring Farms in Brunswick. Fresh organic veggies will be coming our way until the fall! I can’t wait :)

Quick Flatbread Lunch


I keep frozen whole wheat naan (Indian flatbread) in the freezer for quick meals. I actually keep all of our bread products in the freezer because two people just can’t eat it fast enough before it goes bad. This lunch is one of my favorites. Olive oil and garlic on the bottom, arugula, feta, a little moz cheese (to hold it all together), s&p and lots of rosemary!
I actually make this in my toaster oven :)
A little side salad and voila!

Red, White and Blue Oats


This mornings oatmeal featured blackberries, strawberries and almonds. A teaspoon of almond butter and a drizzle of maple syrup came to party too :)
Tasty start to the morning!

Hot (Veggie) Dogs


Veggie dogs on the menu tonight! Back when I ate meat (about 10 years ago) I loved a good hotdog like pretty much everyone. It was one of the few things I missed when I became a vegetarian, until I got hooked on veggie dogs! I've tried a few different brands and I've found my favorite to be SmartDogs (these are the jumbo variety). Throw them on the grill in a whole wheat bun and you've got a great fast meal that tastes good and is good for you!
The jumbo veggie dog has 80 calories, 1 gram of fat, no cholesterol and 15 grams of protein. Pretty great substitution right? Top with your favorite condiments and you may not even notice it's not real meat :)

More corn on the cob! Love love loveeeeeee. A simple tomato, cucumber and basil salad on the side. Tossed with olive oil, red wine vinegar and plenty of s&p.

I just realized how many posts contain eggs lately... I like them! What can I say! Two hard boiled eggs for breakfast with a whole wheat english muffin and a berries. Mmmm.
and yes I eat the yolks, I like them too ;)

Dinner Time Summer Style


Does any meal scream summer more than corn on the cob and seafood? I happen to love, love, love corn especially on the cobb (and baby corn from a can).
While the Man-friend tended to the corn and salmon on the grill I prepared mussels for the first time solo. I love to eat seafood but do not love to cook it, I like it best when prepared for me. It actually wasn't so bad! I sautéed two large cloves of garlic roughly chopped in a tablespoon or so of olive oil, add some S&P and a healthy sprinkle (I actually slipped and added much more than I'd hope for!) of red pepper flakes. After these sautéed all together for a couple minutes I added a big glug of white wine, rinsed the mussels in the sink and added them to the pot. I used my wok because... well because I like my wok. No other reason! 
When the mussels opened up I turned off the heat and left them covered so they'd stay warm while I waited for the salmon and corn to be ready. The Man-friend brushed the fish with maple syrup and seasoned with S&P. Delightful. 
First corn of the season! If you soak the corn in it's husk you can grill it like that! This being the first corn of the season we misjudged how long it takes to cook, if you look closely the left side looks pretty raw! The salmon was cooked to perfection though! 
Dinner enjoyed before dark watching the boats!

Eggscellent Sunday


Good to have fresh food back in the house! Delightful Sunday morning breakfast at home. It's beautiful out! Fried eggs with avocados and scallions, whole wheat toast and some strawberries :)
Generous squeeze of sriracha of course. Yum! Hope everyone is enjoying the weather today, summer is so near! I'm spending the afternoon going through vacation pictures and blogging away!

Bare Bones


Hey all! We are back from California and ready to get back into the swing of things! Too bad we returned to EMPTY cupboards. It always seems like a great idea to try to not buy groceries before leaving for a trip. The trouble is, when you return all jet-lagged and lazy there's nothing to eat!! Gotta get crafty! 
Egg salad from lone fresh ingredient! Two eggs, a little mayo and lots o' mustard and s&p. Bread from a frozen loaf in the freezer, grilled in a pan brought it right back to life!
Weird old-ish carrots on the side...Not too bad actually! We had amazing food in California and full posts will be up soon!

A Sonny Brunch


Saturday morning at Sonny's in downtown Portland was a delightful way to start a sunny weekend. I loved the cute vases on all the tables. It was just starting to warm up when we arrived and the were setting up the outside seating. I’d love to come back another day and enjoy the open air tables.
The menu seemed to have a South American twist as well an extensive drink list! Too bad I was headed to work after and enjoyed a mocktail of cranberry and OJ instead of a much desired mimosa.
Every time I go to breakfast I suffer with the age old question of sweet vs. savory. This morning the question was simple. They do not have eggs benedict…so I will go with sweet! Pancakes with strawberries mixed in. They were really great!
My neighbor here went with the mac n’ cheese which I enjoyed a couple of bites of (thanks Paige!)
The man-friend ordered the ojos grandes which consisted of eggs, potatoes beans, and manchego cheese and salsa verde. Also snagged a bite of this :)
