Something Fishy

It’s Mainely veggies, not only veggies. I am a pescatarian and love me some fish! We usually only buy it when it’s on special though because it tends to be pretty pricey. This particular fish was on sale for $5 off per pound. It’s flounder. 
The man friend always takes charge of preparing fish. Even though I like to eat fish I don’t really love to handle it raw. So I’m thankful he doesn’t mind! I’m more of a peel the carrots and not so much peel the shrimp kinda gal. He prepared it in the an egg wash with breadcrumbs and baked in the oven on 375* until flakey.
Harpoon Summer was enjoyed with dinner.
In addition to our fish I prepared a delish spinach salad with a shallot and Dijon mustard vinaigrette and Lundberg Farms garlic risotto. These box risottos are awesome and may be just as good as homemade! My favorite variety is the creamy parmesan!
